I am SO sorry I haven’t been keeping up on the blog lately. I will get back to it. Summer is long, hot and extraordinarily busy.

Figured I would post it here since I don’t want to lose it. B, N and I have been really enjoying the marshmallow fluff desserts from Ikea and I wondered to myself how hard it would be to make my own marshmallow fluff. After a very short Google search, I came across this recipe from www.kattitudes.com. Posting here as I know if I search again, I’ll never find it. Bonuses are that it’s all natural.
Homemade Marshmallow Fluff
Ingredients:
2 cups sifted confections sugar
1/2 teaspoon salt
3 egg whites
2 cups light corn syrup
1 tablespoon vanilla extract
In large bowl, combine egg whites, syrup and salt. Beat for 10 minutes until thick. At low speed, add confectioners sugar. Add vanilla extract and beat until blended. Makes two quarts.
Here you go. I’m going to try it the next time I make my marshmallow chocolate frosting recipe. Not sure if that’ll be on B’s bday cake or not, but best to be prepared.
Hey all! Just a quick update today. I will post some pics later in the day if possible. We’re cleaning and working on the bathroom today. Nicholas has been dry for the last week at night, so the pullups are lasting longer than expected. We’ll put him in undies next week and hope for the best. He’s currently Wall-E obsessed. I found him a shirt a few days ago and he demands to wear it daily. I’ll have to go out and find him another one.
Lunch is made and it’s time to eat. I’ll try and update more later.
